Protein Caprese Salad
Feeling like you are always having the same type of boring salad? Try this Caprese reboot and get energy to continue with your day without extra calories!
Caprese salad is always one of my favourites! There is simply something magical with mixing tomatoes and mozarella. But normally I have it just as an entry or a side salad next to balsamic chicken or other meats, and I feel that just to make a bigger normal Caprese Salad would simply not satisfy me through the day.
That’s why I created this new salad that mixes all the greatness of the Caprese Salad with other protein components such as chicken breast and egg, to give it the punch that you need to continue with your day! It has almost 50gr of protein!
In this version I of course used cucumber as a base since I don’t eat green leaves, but if you do, feel free to exchange the cucumber and try it as as a more traditional salad, I am sure it will be just as great!
PROTEIN CAPRESE SALAD SALAD
Time: 15 minutes
Portions: 1 portion
Calories: 420 cals
INGREDIENTS
1/2 a Cucumber (Or 1 cup of green leaves)
5 Cherry tomatoes
1/2 Ball of Mozzarella (100gr)
100gr Chicken breast
1 Egg
Balsamic Vinegar
Basil leaves
DIRECTIONS
- Heat up a pan and a small waterpot
- Start frying the chicken breast with a bit of cooking spray until golden
- Boil the egg until desired consistency (around 7-8 minutes)
- Slice the tomatoes, mozarella and cucumber (or lettuce)
- Start aranging the plate with a bed of cucumber (or lettuce), then the cheese, followed by tomatoes.
- When the chicken is golden arange in the plate
- When the egg is ready, peel and place on the plate
- Decorate with basil leaves and season with salt and pepper if desired
