Hearthy but healthy, this saucy dish feels like comfort food, but is actually full of veggies! This party of flavours mix to perfection in the oven with a delicate touch of gratin cheese. It is easy to make dish and will now become one of your favourites!  

This dish will make you look like a master chef in front of your friends, familiy, or even just in front of the tv. It is extremely easy to make and comforting, but yet low in calories and high in protein! Many traditional recipes can be up to 500 calories, but this version uses mainly clean ingredients that give it the deepest flavours, and when using lean mince, you can also get rid of some unnecesary fats. Feel free to add up more things to the filling if you have some leftovers, other favourite veggies like grated carrots or corn, or even add up rice to the mix!

 

FILLED PEPPERS

Time: 30 minutes

Portions: 2 –2 halves each

Calories: 290 cals

INGREDIENTS

2 Bell peppers

200gr Lean minced beef

1 Diced onion

200ml Crushed tomatoes or 1 fresh diced tomato

60gr Grated cheese

Spices

 

DIRECTIONS

  1. Wash and cut the bell peppers lenghtwise, removing the seeds.
  2. Preheat the oven at 200°C/400°F. Place the cut bell peppers in the oven while it preheats, skin side up.
  3.  In a pan, fry the onions and the mince with a bit of oil until golden.
  4. Pour the tomatoes in the pan and mix it with the meat.
  5. Add spices such as salt, thyme and a bit of sugar.
  6. When the meat mix is ready and bubbly, take the peppers out of the oven and pour the meat in each pepper half.
  7. Top each pepper with a quarter of the cheese.
  8. Put the filled peppers back in the oven until the cheese is melted and a bit golden, around 10 minutes.
