This lasagna soup recipe is perfect for dinner in a cold evening! It is rich, with deep flavours and comforting. And it actually does taste like lasagna!

This soup is everything you wish for. It has a deep tomato flavour, is meaty and cheesy! It is very easy to make, and it only has a bit of the carbs and fat that a full lasagna would have, and comes not even close to the 800 calories that a regular lasagna can have. On the other side, it has over 26 grams of protein, making it very filling and great for weighloss! This lasagna soup feels so much like comfort food, but at the same time it gives you the impression of a fancy candle light dinner. Feel free to add up any additional veggies and even a bit of greek yoghourt to make it more creamy.

LASAGNA SOUP

INGREDIENTS

1 Can cut tomatoes

2 Cups of broth

200gr Lean mince

1 Diced onion

2 Sheets of lasagna

60gr Grated cheese

Spices

1 Cup of water if you wish it a bit lighter

DIRECTIONS

  1. Fry the onions and the mince until golden, seasoning with salt, garlic and onion powder, oregano, basil and a bit of sugar.
  2. Add the tomato and the broth. Bring to a boil and let it simmer for 10 minutes.
  3. Break the lasagna sheets and place inside the soup, cooking until soft.
  4. Serve hot and top with the cheese.
